Bottled Tuna Guide
To the Pacific Islands, tuna is a favoured food item. It's versatility in meals and taste allows tuna to be a key ingredient in many recipes and all meal times throughout the day.
Tuna also contributes to a large portion of the protein consumed in the Pacific and to the revenue earned by many Pacific countries.
To further promote the use of tuna, this guide book on how to make bottled tuna has been developed. The guide book was prepared by Dr. Taro Kawamoto, FFA's Tuna Industry Adviser, on secondment from the Overseas Fishery Cooperation Foundation of Japan (OFCF). The guide steps the reader through the process of manufacturing bottled tuna as small scale commercial product.
